The cast iron griddle plate, which sits over a pair of gas burners enables fish, meat and vegetables to be rapidly cooked with a minimum of fats. By using one burner at maximum and the other at minimum, it is possible to create a graded heat enabling large pieces to be seared on the hotter end and then cooked through on the cooler part.
